CCFCC-Saputo Junior Chef Exchange
The Canadian Culinary Federation (CCFCC) is actively committed to the education and development of its Junior Chef members. It was this investment in young chefs that spawned the Junior Culinary Exchange in 2012. Since then, every year, all Junior Chef members of the CCFCC are invited to apply to take part in this exciting adventure!
The annual event allows four deserving young Chefs to enjoy the experience of a lifetime. The Junior Chefs have the opportunity to spend two weeks, at no charge, in a different region in Canada to work with mentor chefs and participate in a number of memorable activities.
During their stay, each Junior Chef is paired with a local chef to work side by side with some of the best in the industry and gain valuable culinary experience.
The first Junior Culinary Exchange took place in 2012. The Junior Chefs were introduced to many of the treasures that exist in the Okanagan Valley in B.C. In 2013, the Exchange took them to Prince Edward Island, where they were dazzled by the charm of the East Coast. The third annual Exchange took place in the beautiful towns up and down the coast of Vancouver Island.
In 2015, the Exchange was hosted in Saskatchewan, treating the Juniors to a glimpse of the many wonders of the Canadian Prairies. In 2016, they explored Quebec, including the many attractions of Montreal, its surrounding area and Quebec City.
CCFCC-Saputo Junior Chef Challenge
During a recent initiative, the Junior Chefs were invited to participate in a Poutine Recipe Challenge that was sponsored by the CCFCC and Saputo Foodservice.
The Junior Chefs were given the opportunity to create new and exciting poutine recipes. From among the truly inspired creations sampled by the panel of judges, a sumptuous poutine with lobster and béarnaise sauce was selected as the winner.
