Canada Day Sliders

Elevate a classic with Brie cheese. This soft surface ripened square brie has a white, bloomy rind, a supple body, and a slightly fruity taste. To prepare this gourmet dish, begin by roasting the tomatoes and preparing the candied bacon. Shape the ground beef into 50 g slider patties, season generously, and add the bacon, topping it off with Brie until it melts. Complete the burgers by layering garlic aioli, arugula, and a slice of roasted tomato, and secure the patties with a frill pick for a delightful presentation.

Ingredients

  • 2 each Brioche Slider Buns
  • 150 gRegular Ground Beef (78%)
  • A pinch Salt & Pepper
  • 3 slices Roasted Tomato
  • 50 ml Garlic Aioli
  • A pinch Arugula
  • 75 g Square Brie Cheese
  • 3 slices Maple Candied Bacon

Roasted Tomatoes

  • 200 g Tomatoes (thin slices)
  • 25 ml Extra Virgin Olive Oil
  • 10 g Italian Spice Blend
  • 15 g Salt & Pepper

Maple Candied Bacon

  • 400 g Bacon
  • 150 gBrown Sugar
  • 50 ml Maple Syrup
  • 15 g Black Pepper

Directions

  1. Lay tomato slices on a baking sheet lined with parchment paper. Drizzle olive oil over them and sprinkle herbs and spices evenly. Roast in a hot oven until the tomatoes dehydrate and start to brown slightly.
  2. For the bacon, place it on a baking sheet lined with parchment paper. Press brown sugar and black pepper onto both sides to coat thinly. Bake in a 390°F (200°C) oven until the bacon starts to crisp. Flip it over, drizzle with maple syrup, and continue baking until the bacon is crisp and the sugars caramelize.
  3. Shape the ground beef into 50 g slider patties and season with salt and pepper. Grill or griddle them for 2 minutes, then flip and add bacon and Brie cheese on top. Cook until medium well and the cheese melts.
  4. While toasting the buns, spread garlic aioli on both sides. Place arugula and a slice of roasted tomato on each bottom bun. Top with the patties and finish with the top bun. Secure with a frill pick.
