Directions
While Korean bibimbap is traditionally served with thin strips of beef, this inspiration featuring Fior di Latte cheese makes for an exciting, crave-worthy vegetarian dish! Marinate thinly sliced Fior di Latte cheese in a mix of garlic, soy sauce, honey, sesame oil, and grated pears.
Sauté vegetables (mushrooms in canola oil with soy sauce, sugar and garlic; spinach in sesame oil with garlic; bean sprouts with garlic and soy sauce; carrots and zucchinis in canola oil). Cook each vegetable individually and let them cool to room temperature. Place each of the veggies atop a warm bowl of rice before adding the marinated Fior di Latte cheese.
Finally, crown with a fried sunny side up egg, drizzle with bibimbap sauce (gochujang, mirin, rice vinegar, soy sauce, minced garlic, and sesame oil), and garnish with a handful of toasted sesame seeds.
The sauce, vegetables, and marinated cheese can all be made in advance to speed things up and save on prep time. This all makes for a quick execution, as you only have to cook some rice and fry the eggs before putting the bowl together
