Lumache Primavera

Ingredients

  • 25 ml EV Olive Oil

  • 1 clove Garlic, minced

  • 25 gr Red Onion, diced

  • 100 gr Asparagus, sliced 2 cm

  • 100 gr Cherry Tomatoes, halved

  • Lg Pinch Salt and Pepper

  • 200 gr Lumache Noodles, cooked

  • 50 ml Sour Cream

  • 100 gr Fior di Latte, torn

  • 50 gr Bella Lodi, shaved

  • ½ lemon Lemon Zest

  • 1 sprig Thyme, fresh

  • 1 sprig Italian Parsley, rough chop

  • Pinch Chili Flakes

     

Directions

  1. Heat olive oil in a skillet until shimmering. Add red onion and asparagus and cook until both are soft. Add garlic and tomatoes and cook until fragrant.
  2. Add cooked noodles into the pan with salt and a healthy pinch of pepper and toss to warm through.
  3. Add sour cream and herbs and heat until simmering, tossing well.
  4. Remove from heat and stir in the torn fresh mozzarella chunks.
  5. Plate in a pasta bowl with fresh shavings of Bella Lodi on top.
  6. Garnish with a little more fresh herbs, black pepper and chili flakes.
