Directions

1. For the donuts: 
   
2. Whisk together flour, baking powder, salt, and sugar.  In another bowl, whisk together: milk, vanilla, and egg until well combined.
   
3. Pour wet ingredients into a well in the dry ingredients and mix until the dough starts coming together then turn out onto a floured surface and knead until cohesive.  Add more milk or flour depending on how wet or dry the dough is… should be the consistency of pizza dough.
   
4. Divide into 2” balls then working in batches, deep fry each of them until golden brown.  Remove from oil, toss in the cocoa sugar and set on paper towels to cool.
   
5. For the filling:  
   
6. Whisk egg yolks and sugar together in a saucepan until smooth, add milk and mix well.  Heat to a high simmer stirring all the while and cook until mixture thickens slightly.  Remove from heat and cool completely.
   
7. Add in the mascarpone and whisk until smooth.  Place mixture into a piping bag.
   
8. Poke a hole in the cooled donut and squeeze the mascarpone filling in – probably about 10ml per donut.  Repeat with all the donuts.
