Brussels Sprouts & Apple Parmesan Harvest Salad

Brimming with seasonal goodness, this salad showcases crisp Brussels sprouts, juicy gala apples, sweet sun-dried cranberries and crunchy pumpkin seeds, crowned with delicate Shaved Parmesan Cheese. Drizzle with a zesty olive oil, lemon, and Dijon mustard dressing for a fresh plate that celebrates Fall’s best bounty.

Ingredients

  • 500 g Brussels Sprouts

  • 2 each Gala Apple, diced

  • 50 g Shaved Parmesan Cheese

  • 50 g Pumpkin Seeds, hulled & roasted

  • 75 g Sun-dried Cranberries

  • 50 ml Olive Oil

  • 50 ml Lemon Juice

  • 1 tsp Dijon Mustard

  • To taste Salt & Pepper

  • To garnish Sage & Rosemary

Directions

  1. Start by washing and drying the Brussels sprouts, discarding the stems and any wilted leaves. Use a mandolin to thinly slice the Brussels sprouts and place them in a mixing bowl.
  2. Combine apple, cranberries, and pumpkin seeds in the bowl.
  3. In a separate bowl, blend olive oil, lemon juice, Dijon mustard, salt, and pepper until the dressing is well mixed.
  4. Pour the dressing over the salad and toss thoroughly. Present in a dish garnished with Shaved Parmesan Cheese, fresh sage, and rosemary.
