Directions
Top falafels with Paillot de Chèvre Goat cheese and bake until warm. This cheese holds its shape under heat, giving this bowl inspiration an interesting “wow” factor.
In a bowl, add shredded beets, olive oil, and lemon juice to cooked couscous and plate on one side of a serving dish. On the other side, add your choice of hardy greens (kale, chard, rapini, collard) tossed in sesame dressing and then top with roasted red peppers. Place the warm falafels with the goat cheese in the centre of the bowl, add a drizzle of dressing, and garnish with sesame seeds.
Go one step beyond: Prepare your own sesame dressing by blending tahini, garlic, parsley, plus lemon juice until smooth. For homemade falafels, simply blitz garlic and kale individually before blending in cooked chickpeas, lemon juice, flour, olive oil, cumin, and paprika.
