This easy-to-make burrito bowl inspiration will satisfy all types of eaters. With its sharp and nutty flavour, old yellow Cheddar cheese shred stands out and truly brings this dish to another level. Fry cauliflower rice in olive oil with some cumin, chili powder, salt, and garlic powder. Once cooked, place in a bowl and arrange toppings over the “rice,” starting with diced roasted chicken, tomatoes, diced avocado, black beans, roasted corn and, finally, old yellow Cheddar cheese shred. Place a dollop of sour cream in the centre of the bowl and top with cilantro. This nutritious bowl is a definite crowd pleaser on top of being the perfect take-out menu option!
Try switching out the roasted chicken breast for Tex Mex seasoned ground beef or pulled pork. Why not make it vegetarian by swapping the chicken for jackfruit seasoned with cumin, chili, cayenne, salt, and pepper!
