Chicken Cacciatore Poutine

Traditional poutine is a delightful comfort food, but when you add premium Cheese Curds, it elevates the dish to poutine perfection. Introducing Chicken Cacciatore Poutine, with a Roman flair, combining crispy fries, tender chicken, aromatic brown gravy infused with white wine, and the star of the show - smooth, buttery Cheese Curds. This dish is bursting with flavours and definitely belongs on your menu!

Ingredients

  • 1 cup Cheese Curds
  • 1lb Boneless chicken thighs
  • ½ lb Pre-blanched French fries made from Red Potatoes
  • 2 Shallots, chopped
  • 2 cloves Garlic, crushed
  • 1 sprig Fresh Rosemary
  • 1 sprig Fresh Thyme
  • ¼ cup Extra Virgin Olive Oil
  • 1 cup White Wine
  • 1½ cups Brown Gravy/Poutine Sauce
  • ½ tsp Salt, to taste
  • ½ tsp Pepper, to taste 

Directions

  1. Add olive oil to a hot pan. 
  2. Sear chicken thighs till browned on both sides. 
  3. Add shallots and garlic, let soften. Add fresh rosemary and thyme and fry until fragrant. 
  4. Deglaze pan with white wine. 
  5. Add gravy, then cover and simmer for 25 minutes or until chicken is cooked through. 
  6. In the meantime, fry or bake your favourite red potato fries till crispy.
  7. Assemble in layers: Cheese Curds, fries, gravy, Cheese Curds, fries, gravy. Serve!
