Seafood Tower Leveled Up with Cheese

Ingredients

  • Lobster Grilled Cheese

    • 125 g Lobster Meat
    • 25 g Butter
    • 10 g Chives, chopped
    • 1 each Brioche Hot Dog Bun
    • 25 g Old White Cheddar Cheese 
  • Onion Jam

    • 500 g Onions, sliced
    • 10 g Salt
    • 15 g Butter
    • 50 ml Red Wine Vinegar
    • 175 g Sugar
  • Shrimp Saganaki

    • 25 ml Olive Oil
    • 50 g Red Onion, diced
    • 2 cloves Garlic, minced
    • 1 tsp Oregano, leaves
    • Pinch Chili Flakes
    • 100 g Grape Tomatoes, halved
    • 500 g Shrimp, raw deveined and peeled
    • 100 ml Cooking Wine
    • 100 g Feta Cheese, cubes
    • To garnish Parsley, rough chop
  • Crab Dip

    • 250 g Cottage Cheese
    • 100 ml Mayonnaise
    • 100 ml Sour Cream
    • ½ each Lemon, juice and zest
    • 2 tsp Old Bay Seasoning
    • 50 g Celery, diced
    • 25 ml Sriracha Sauce
    • 15 g Chives, chopped
    • 500 g Dungeness Crab Meat
  • Seafood Tower

    • 2 dozen Crostini
    • 2 each Lemons, wedges
    • 2 each Lobster Tails, steamed and halved
    • 250 g Shrimp, poached
    • 250 g Crab Legs, steamed and split
    • 200 g Grape Tomatoes, halved
    • 1 head Butter Lettuce Leaves
    • 2 pieces Flatbread, pre-cooked
    • 25 ml Butter, melted
    • 2 tsp Old Bay Seasoning

Directions

  1. To prepare the Onion Jam, heat olive oil in a skillet over medium heat. Add onions and salt, and cook until translucent for about 10 minutes, stirring occasionally. Then, reduce the heat to medium-low, pour in the red wine vinegar, and continue cooking for another 10 minutes, stirring occasionally. Increase the heat to medium-high, add sugar, and cook for approximately 15 minutes, ensuring the mixture does not stick to the pan. Remove from heat and let it cool. 
  2. For the Lobster Roll, gently warm the lobster meat in butter until heated through. Stir continuously to coat the lobster meat evenly with butter. Once warmed, add chives and mix well. Cut the brioche bun into slices and toast them under the broiler. Place a slice of Old White Cheddar Cheese on each toasted slice and allow the cheese to melt. Spread the onion jam on the toasted bun, then add a generous portion of poached lobster meat on top. Garnish with chives.
  3. To prepare the Saganaki, heat oil in a skillet over medium heat. Cook onions for 3 minutes until softened. Add tomatoes, garlic, oregano, and red pepper flakes, and cook for an additional minute until fragrant. Pour in white cooking wine, bring to a boil, then reduce heat to a simmer until the wine evaporates. Add shrimp and cook for about 3 minutes, stirring occasionally until they turn pink (time may vary based on shrimp size). Finally, add Feta Cheese and broil until the cheese softens. Remove from heat, let it cool slightly, until assembling the tower.
  4. For the Crab Dip, combine Cottage Cheese in a food processor until smooth, then transfer to a mixing bowl and mix with other ingredients. Ensure the crab is well drained. Season with salt and pepper, then chill until ready to assemble the tower.
  5. For the Seafood Tower: Brush flatbread with melted butter and Old Bay seasoning, then toast until slightly golden. Cut into triangles and place on the tower base with crab dip, poached crab legs, grape tomatoes, and butter lettuce.
  6. Place shrimp Saganaki mixture on crostini, then add to the tower with lemon wedges, butter lettuce, and extra poached shrimp for decoration.
  7. Lastly, add lobster grilled cheese bites to the tower’s top layer, garnishing with poached lobster tails and lemon wedges.
