This recipe is an easy twist on the fan favourite gnocchi.Prepare your black kale and pistachio pesto by adding kale stems and garlic to boiling salted water. In a food processor, add toasted pistachios, basil, lemon zest, olive oil, and Vitalite Plant-Based Parmesan Flavoured Extra-Fine Shreds.
Sweat some garlic and shallots in a pan with olive oil. Add plant-based cream and Vitalite Plant-Based Mozzarella Flavoured Shreds. Stir until fully incorporated and thick. Add the pesto to the sauce.
Add cooked gnocchi to the sauce. Top with toasted breadcrumbs, pickled basil, olive oil and chives to serve.
