Directions
Prepare the latkes (potato pancakes) by grating potatoes and onions. Strain. In a mixing bowl, add the potato/onion mix, 2 flax eggs, potato flour, salt, pepper, and baking powder. Fry in a medium-heated pan until crisp and golden brown on both sides.Place the latkes in an oven safe dish and generously cover with vegan marinara sauce. Top with Vitalite Plant-Based Mozzarella Flavoured Shreds before baking in the oven.
Go one step beyond: For the vegan marinara, sauté onion and garlic before adding a can of whole plum tomatoes and some basil leaves. Cover and let simmer on low heat until thick. Add salt, dried oregano, ground chili pepper, granulated garlic, onion powder, and a tablespoon of red wine vinegar. Let simmer for another 15 minutes. Incorporate unsalted margarine. Process until smooth.
